sullivan palatech compressor, model sd4p20tctm61ykl16 made in 2000 (20 hp)
Compressor keeps stopping. and compressor temp is only 180 degrees. switch is set to shut off at 230 degrees
Service techs checked it out and compressor is ok.
Any ideas why it is quitting?

What type of compressor are we talking about here? I couldn't find that model number. A portable (diesel) one?
Does it always stop at the same temperature (180 degrees) or after the same running time?
It could be something as simple as a bad contact or broken sensor. Try to bypass the safety-sensors one by one and see it the problem is still there. Try to find a bad sensor this way. (This is only possible if the machine uses make/brake type of safety sensors (switches), not with analog sensor with central controller.)
Of course be sure to do it safely (for example when by-passing the oil pressure sensor on a diesel engine, be sure that the oil level and pressure is ok!).
It could also be a loose contact on the controller or any of the electrical equipment (contact blocks, relays, etc.) Try to fiddle with them with an insulated screwdriver (or by hand if it's safe to do so) and see if the compressor shuts down.
